They’ve given the option for people with really small kitchens that don’t have ovens, or space for optional appliances (i.e. sous vide bath), but if you do have anything that holds steady low temps well creme brulee is a lot more foolproof than steaming over a burner/range. Most western recipes will utilize a water bath in an oven, takes longer but very hard to mess up.
Blow torches from cooking shops tend to be on the small side & expensive, get a decent sized one from plumbers merchants instead.
Also mackerel fillets are really good when cooked with a blow torch.
