Ringo’s thoughts on this month’s dish:
For the caramel, definitely don’t start on high heat. Start on like a 5 or 6 on conventional stovetops, maybe even lower for gas stovetops. Also i didn’t have a steamer so i made a little setup using a wide pan and a dishtowel. Basically keep the lid on and let it simmer without boiling for about 15-20 minutes, should turn out fine. The towel is there to keep the cups from taking direct heat from the pan, which would burn the caramel bottoms.
